In a number of recipes, I see Diamond Crystal recommended as the kosher salt to use. Where I live, only Morton's is available. Is there some superior quality to Diamond Crystal kosher salt that I might not get out of another brand?

I have seen a number of recipes that call for using "kosher salt". This is ridiculous to me, as I very well know that all salt is kosher, and so I am wondering what I am missing here. What is the advantage (and uses) of kosher salt as opposed to…
