Are there more pre-existing ColorFunction options?

Question

Such as "DarkRainbow", "Rainbow", "BlueGreenYellow", and "NeonColors"?

Choose "Color Schemes" from the Palettes menu. It has all the colour schemes listed.

Otherwise you can use ColorData to obtain the possible values (as belisarius mentioned).
